Where does food waste come from? While many people think to point the finger elsewhere -- farms, markets, homes, anywhere but themselves -- Jonathan Bloom, author of American Wasteland cited a New York study that found that 40% of food waste comes from households. Michael Dimock, president of Roots of Change, points out that the problem is a conceptual one: how we think about food determines what becomes waste. As a farmer, former Secretary of the California Department of Food and Agriculture A.G. Kawamura sees waste first hand. The grading and pickiness of consumers lead to "tremendous inefficiencies on both sides: pre-harvest and post harvest."
